Why I Juice This One
I juice this one because beetroot has natural nitrates, which the body can turn into nitric oxide. I think of it as helping the blood flow feel a little more open and generous, which is why athletes love beets before workouts.
Apple and carrot make the beet flavor friendly, while lemon and ginger keep it from tasting too earthy. When I make this, I feel like I am drinking something strong, beautiful, and slightly dramatic in the best way.
Here's What You'll Need
You will need two medium beetroots peeled and chopped, two apples cored, two carrots, one inch of fresh ginger, the juice of one lemon, and one cup of cold water.
How I Make It
I peel the beets because I like a cleaner flavor, then I chop them small along with the carrots and apples. Everything goes into the blender with ginger, lemon juice, and cold water, and I blend on high until the mixture is as smooth as my blender can make it.
Then I strain it slowly through a nut milk bag. Beet pulp can be stubborn, so I squeeze with patience and accept that my hands may look suspiciously pink for a few minutes. I pour the juice over ice and drink it about 30 minutes before a walk, workout, or long errand run.
Made's Tips
Use apples you genuinely like eating because their flavor carries the sweetness in this juice.
If beet tastes too earthy for you, add a little more lemon or half an extra apple.
I rinse my cutting board right away because beet juice is beautiful but not subtle.
